Las Vegas, N.M. – The Roadrunner Bar and Grill is now open to golfers and the community at the New Mexico Highlands Gene Torres Golf Course.

The grill is serving up breakfast, lunch and dinner every day of the week at 1 Country Club Dr. in Las Vegas.

“The golfers are pretty excited that the golf course restaurant has reopened after a two-year hiatus,” said Justin Aragón, head golf professional at the Gene Torres Golf Course. “The golf course restaurant also offers a great venue for special events in the community.”

Local chef Adam Campos of Sapello is the executive chef and general manager for the Roadrunner Bar and Grill. Previously, he was the executive chef at the Moosehead Bar and Grill at Pendaries Golf Course in Rociada, New Mexico, among other chef positions.

“We’re fortunate to have a chef of Adam’s caliber running the restaurant with a wide variety of menu options. Some of my favorites are the English muffin egg sandwich, bison burgers, and the red chili enchiladas,” said Aragón, a Las Vegas native.

The menu features other items like the Roadrunner burrito, Meadow City omelet, Philly’s French toast, basic  burger, Triple Tee grilled tacos, veggie wrap, salads, and pasta primavera.

“We are ecstatic to be offering the community a full-service bar and grill with something for everyone,” Campos said. “What sets us apart from most golf club restaurants is that we have a full dinner menu, which includes rib-eye steak, pan-seared salmon, shrimp scampi as well as other pasta, and a variety of salads. For dessert, we have tiramisu and crème brulee.”

Breakfast is served from 8 – 10:30 a.m., lunch is 11 a.m. – 2 p.m., and dinner is 5 – 9 p.m.

Aragón said a restaurant is an amenity that golfers expect.

“We hope the restaurant will increase the visitors to our Highlands golf course and meet our regular local golfers’ expectations,” Aragón said.
